Одной из больших проблем для веганов является поддержка адекватного уровня витамина В12. Причина в том, что данный витамин не содержится в веганской диете.
У людей, употребляющих в пищу животный белок, также может быть низкий уровень витамина В12, но причины у этого явления другие. Проблема обычно в низком производстве соляной кислоты в желудке, что мешает усваиванию.

Большинство саплементов на рынке содержат В12 в форме cyanaocobalamin, который зачастую не только не преобразуется в биодоступный витамин, но и оставляет после себя в организме небольшое количество цианидов, которые должны быть выведены печенью.
Для преобразования данного витамина в доступный methylcobalamin необходимо, чтобы организм мог правильным образом использовать метиловую группу. Это также важно и для преобразования фолиевой кислоты в доступный организму folate.
Около 55% населения Европы содержат вариацию гена, которая мешает осуществлять данную конверсию. Умное название для этого MTHFR mutation. У людей с Хашимото, аутизмом и некоторыми другими заболеваниями эта вариация, по всей видимости, встречается даже чаще, чем в среднем по популяции.
MTHFR энзим должен конвертировать гомоцистеин в метионин, который является строительным материалом для белков. У людей с дефектом данного гена будет присутствовать повышенный уровень гомоцистеина, что также ассоциируется с воспалительными процессами, болезнями сердца и означает ухудшенную способность к детоксификации.
